2019年 “世界最佳餐厅50强” 排名即将于下个月揭晓,回看一下往年,芝加哥的Alinea从2016年的15位下降到2017年第21,再在2018年降至34,也是榜单上唯一的芝加哥餐厅。另外2018年,意大利的Osteria Francescana 夺取榜首之位,北美纽约地区的Eleven Madison Park从2017年的头把交椅降至第四,Blue Hill at Stone Barns, Cosme 和 Le Bernardin Cosme 均保持了2018在列; 旧金山的Saison在列, 中国上海的 Ultra Violet by Paul Pairet则从2017年的41位升至第24位。
注:50Best历史上曾排除顶级女厨师,也倾向于昂贵的,欧式菜系倾向的餐厅。后改进为更国际化,对于菜品创新,口味融合,盘饰造诣,料理机能多方面评级,和米其林指南相似但又有不同之处。稍早的时候非常侧重于欧洲餐厅,日后多注重亚洲及拉美市场,也在赢得越来越多的粉丝和关注。令每年亦有最佳女性厨师奖,终身成就奖,最佳烘培师奖项等
关于Alinea】Alinea出名并非使用大量的鱼子酱或鹅肝酱。自2005年Alinea首次亮相以来,厨师兼老板Grant Achatz在设计充满情感的菜肴方面树立了良好的声誉,通过精致的花生酱和果冻三明治,或者带有闷烧的橡树叶的 - “秋天的香气”,从他的食客那里引起俏皮的怀旧情绪。同时在分子厨艺方面,有着世界领先的技术。
