《陕西特色裤带面》
要说陕西关中特色传统风味面食,一定是传统的陕西裤带面。因为制作过程中有biang、biang的声音而以Biang Biang面得名。陕西八大怪里有一怪“面条像裤袋”说的就是这个裤带面,面条比裤袋还要宽,两根面就能吃饱。

4)热锅凉油。将葱碎放入爆香,放入番茄,待番茄出水后加入炒好的鸡蛋,加入适量盐、生抽、十三香、鸡精调味。翻炒均匀后起锅盛碗。

5)经过完全的醒面,面饼变得非常柔软。取一条面饼横向擀薄,然后捏住两边向外轻轻延展,同时在面板上像跳绳一样摔打,你会发现很容易拉开拉薄的,而且形状薄而宽如同腰带。如果感觉不是很薄,将拉开的面条对折后用同样方法继续延展即可。

6)锅中加入足量的水烧开,将拉好的裤带面丢入沸水中,最好每做一根,就放入沸水中,这样可以防止面皮粘连。

温馨提示:要求不高的话,封油后的醒面时间1.5小时就可以了。实际操作(和面-哨子-煮面)时间只需30-45分钟即可。
